Donald Zammit, a distinguished chef with 23 years of culinary expertise, retired in 2017, but his passion for the culinary arts began much earlier in his life. He spent his career honing his skills in various kitchens, where he excelled at creating foundational flavors, mastering sautéing, and exploring the art of sauce-making. He was a firm believer in the importance of using fresh, high-quality ingredients, which he often sourced from local farmers' markets, emphasizing that the caliber of components significantly affects a dish's flavor and texture.
Throughout his career, Zammit became known for incorporating seasonal fruits and vegetables to enhance freshness and elevate the overall dining experience. His culinary journey was also profoundly influenced by his love for travel, which took him through the heart of Western Europe, including England, Ireland, Scotland, Wales, France, Italy, and Malta. While in England, he developed a particular fondness for traditional dishes like humble pies and Beef Wellington. After retiring from professional cooking, Zammit continued to explore the diverse flavors of the United States, cooking for friends and family and sharing the recipes he discovered during his travels. Beyond his culinary interests, he is passionate about the outdoors, enjoying activities such as hiking, sailing, biking, and swimming, with a particular enjoyment for fishing offshore.
An adventurer at heart, he also engages in sports, holding a scuba diver’s certification and experiencing thrills through skydiving and heliskiing. Upon retiring, he dedicated himself to philanthropy, serving on the board of the Edward H. Butler Foundation in Buffalo, New York. This foundation supports various educational and cultural initiatives, providing grants to organizations, including Elmwood Franklin School and the Buffalo and Erie County Botanical Gardens Society.
